Anyone got any good soul food recipes?

Basic Soul Food Collard Greens








Ingredients:





4-6 bunches of collard cleaned and steamed


5 slices of turkey bacon


1 smoked turkey leg


1 large chopped onion


seasoning salt to taste


black pepper to taste


7 cups of water





Instructions:





Lay collard greens on top of each other, (no more then 4 at a time)


roll and then cut in half with a knife.


Cut even smaller if you have large leaves.


Line the bottom of a large stock pot with the bacon.


Cook on medium heat until done


Add the water to the stock pot and the grease and bring to a boil.


Now add the smoked turkey, pepper and salt to taste.


Let mixture boil for 10 minutes.


Add the collard greens, and more salt and pepper to taste if desired


to the stock pot.


Rapidly boil for 45 minutes.


Reduce heat and let simmer for 4-6 hours.











Beer Battered Halibut


Perhaps my all-time favorite fish is halibut, and beer battered is my favorite


way of cooking it although it's hard to ruin halibut. Fresh halibut should be


available in your supermarket's seafood section when in season. It can get


expensive. I get mine from friends who live in the northwest and overnight mail


it to me :-)





Ingredients:


3 pounds halibut


1 1/2 cups all purpose flour


1 teaspoon seasoned salt


1 teaspoon pepper


1 teaspoon paprika


1 12 oz can of been (any kind)


Cooking oil. You can cook it in a frying pan or a deep fryer. That determines


how much cooking oil you use. I use vegetable oil.





Preparation:


1. Cut halibut into chunks about 1 1/2 inches square works nicely.


2. Combine all the dry ingredients in a bowl. Mix to blend.


3. Stir in beer to form a loose batter.


4. Drop the halibut chunks into the batter.


5. Heat your oil to medium high. I put my deep fryer on 375.


6. Fish out battered halibut chunks and drop them into the hot oil. Don't put


too many at a time. When they are a golden brown on all sides take them out and


place on a paper towel to drain.


Goes great with just about anything including collard greens, corn bread, and


Cole slaw. Also tastes great just eaten alone. From Soulfood Recipes Learned On

4 medium sweet potatoes (2 pounds)


1/2 cup butter (1/4 pound)


3/4 cup granulated sugar


1/2 cup firmly packed


brown sugar


1 tablespoon fresh lemon juice


1/4 cup milk


2 tablespoons cornstarch


1/2 teaspoon ground nutmeg


1 teaspoon vanilla extract


2 cups mini marshmallows


Preheat oven to 350 degrees F.


Grease a 1-1/2-quart casserole.





Preheat oven to 350. Grease a 1 1/2 quart casserole. Peel and cut sweet


potatoes into large chunks. In a large pot of boiling water, cook the


potatoes until tender, 20 to 30 minutes. Drain.





Return potatoes to the pan, but do not heat. Add butter and mash with


potatoes. Stir in both sugars and the lemon juice. In a small bowl, stir


together the milk, cornstarch, nutmeg, and vanilla. Stir into the


potatoes. Spoon potatoes into casserole dish. Bake for 1 hour. Sprinkle


marshmallows over the top and let bake for 7 to 10 minutes longer or until


the marshmallows are puffy and golden.

chicken and drop dumplings





1 roasting chicken


salt and pepper


1 bay leaf


4 c chicken stock


1 onion


2 cloves garlic


Preheat the oven to 350f. Dry the chicken with paper


towels and place it in a deep roasting pan and bake


uncovered for 20 minutes.





Pour in the hot stock. Add the bay leaf, onion and


garlic. Cover, reduce the heat to 325f and continue


cooking 1 hour.





Remove the chicken to a heated platter. Skim the


fat from the pan juices. Prepare the dumpling dough--see


below. Bring defatted juices to a simmer


and cook dumplings in roasting pan as directed.


After all the dumplings have been cooked,


strain the juices and thicken for gravy. Season to taste.





Drop Dumplings





2 c flour sifted


1 tbsp baking powder


1 tsp salt


1 tbsp butter


1 egg beaten


3/4 c milk





In a larch mixing bowl, sift together all flour,


baking powder and salt. Work in the butter with fingertips.





In a separate bowl mix together the egg and milk.


Gradually add wet ingredients to dry ingredients,


mixing them to make a soft dough.





Drop dough by the tablespoon into hot simmering pan juices.


Cook until firm, around 10 minutes.

sweet potato pie





Crust for a 9 inch pie


2 c mashed cooked sweet potatoes


1/2 c granulated sugar


1/2 brown sugar


2 eggs beaten


1 c light cream


2 tbsp


1 tsp ground cinnamon


1/2 tsp ground ginger


1/2 tsp ground mace





Preheat oven to 425f. In a large bowl mix the sweet potatoes


well with the sugars. Beat in all the remaining ingredients.





Pour into the pie shell and bake 10 minutes. Reduce


heat to 350f and bake another 30 to 35 minutes or


until custard is set.Anyone got any good soul food recipes?

In a large plastic storage bag add Flour Soul seasoning, Cayenne,Pepper,Onion Powder, Garlic Powder, and paprika.





In a medium bowl beat eggs, and set aside





Dip cleaned chicken pieces into egg and immediately put into sesoning flour and shake until thoroughly coated. Repeat until all Chicken is gone.





In a DFF(Deep Fat Fryer) Cook chicken until done.





In a large Pot Cook collard Greens.





In a medium Pot Cook Blackeyed peas.





Ina roasting pan Put Collard Greens in and Place hamhocks in .Put a little water in the pan to create steam. Bake in the oven about and hour and a half.








Once everything is done...


Plate the Chicken and some collard greens and blackeyed peas.


Add some hot sauce and ENJOY!!!!!!!!!
Baked Chicken:


Just season the meat well with some seasoning salt %26amp; garlic or salt, pepper %26amp; garlic, put in a baking pan %26amp; cover. Cook in oven @ 325 degrees. I always let mine cook for at least 3 hours. After it's cooked for about 2 hours uncover it so the outside can get brown. When it covered the mean gets tender, but it's all white %26amp; doesn't look appetizing. Also, turn the meat every hour. Once the chicken is a nice brown %26amp; the juices on the bottom of the pan have become sticky %26amp; somewhat thick it should be finish. I recommend using a disposible foil pan.
fried squash talk about yummmmm . all u need if flour oil a pan and some squash oh and a egg and some salt. slice the squash dip it in the egg then roll it in the flour then put it in the pan with oil and cook away til browned a little. salt after u pull them out of the grease
