Anyone have recipes on soul food?

my kids are learning about the influence black americans have on our country, since it is BLACK HISTORY month. we are learning about influential civil rights advocates, leaders, musicians, politicians, and now their culture. i thought it'd be a good idea to make a meal that some would consider ';soul food';. i know the basis of soul food comes from things that were readily available to african americans and alot of love and soul. so recipes on what i can cook up would be great!Anyone have recipes on soul food?

Any specific ingredients? I have Edna Lewis' cookbook right here within reach. She was reknowned for her soul food (yes, she was African-American) and just passed away last year I believe. There are too many in it to list, so if you have a few ideas I can look them up!
Soul food is basically southern food. Greens..collard, turnip, field peas, chicken usually fried, potatoes mashed, really any part of a pig or hog. Paula Deen has some great simple soul/southern recipes. Type in any of the suggestions that I gave you at www.foodnetwork.com/pauladeen and you should be able to get some great recipes. Good Idea that gives the kids a different perspective and makes it more fun. Good luck. You can also email me if you like.
