Anyone have any good and easy Soul Food recipes I can try out?

here are a few easy recipes:





fried cabbage:





1 medium head of cabbage, cored and shredded





陆 medium sized onion, chopped





录 cup olive oil





2 tablespoons hotsauce





1 tablespoon seasoned salt





1 tablespoon garlic powder





1 tablespoon onion powder





陆 teaspoon black powder





Preparation:





1. Add olive oil to large skillet and turn on medium heat.





2. Add cabbage, chopped onion and other ingredients.





3. Stir ingredients together.





4. Cover and cook for 5 - 7 minutes stirring every 2 minutes.





5. Continue cooking until desired tenderness is reached.











Collard greens:


4 bunches of collard greens





2 Smoked Turkey Necks





1 chili pepper


1/3 cup apple vinegar





1 teaspoon salt





1 tablespoon garlic powder





1 tablespoon onion powder





陆 cup margarine





Preparation:





1. Place 6 to 8 quart pot on stove filled half with water.





2. Turn on medium heat and place 2 smoked turkey necks in pot.





3. Wash collard greens thoroughly stripping off stems from leaves.





4. Breaks leaves into bite-sized pieces.





5. Add collard greens to pot of boiling water and turkey necks.





6. Add other ingredients into pot, stir and cover.





7. Simmer for 1陆 hours or until tender.








Crab cakes:


1 lb. crab meat


陆 cup green onion finely chopped


1 celery stalk finely chopped


1 egg beaten


3 tbsp. tartar sauce or mayonaise


陆 cup bread crumbs


陆 teaspoon salt or seasoned salt


陆 teaspoon black pepper


1 tbsp. lemon juice


1 tbsp. butter





Preparation:





1. Place butter in skillet and medium heat, add celery and green onions. Cook until tender.





2. In mixing bowl add all ingredients (crab meat, onions, celery, egg, bread crumbs, salt, pepper, lemon juice, tartar sauce or mayonaise. Mix well and form mixture into round patties or cakes.





3. Spray cooking spray into frying pan and place patties into preheated frying pan.





4. Cook on both sides 4-5 minutes or until golden brown. Serve hot.











Steak Casserole:


2 pounds round steak (cubed)


1 can chicken %26amp; rice soup


1 can cream of mushroom soup


3 tablespoons soy sauce


1 can evaporated milk





Equipment:





Frying pan


Medium-sized casserole dish


Large bowl


Measuring spoons





Instructions:





Preheat oven to 350 degrees F.


Roll steak in flour.


Brown steak in the frying pan.


Place the steak aside to drain the excess grease.


Mix the remaining ingredients in a large bowl.


Place the steak in the greased casserole dish.


Pour the ingredients from the bowl over the steak.


Cover the dish with foil.


Place the dish in the oven for 1 陆 to 2 hours. (Remove the foil the last 15 minutes.)


Serve over a bed of rice.





Southern Garlic Catfish:


1-1/2 pounds catfish (fillets)


1 egg


garlic salt


1 package of marks fish breading or 1/2 cup of flour and 1/2 cup of corn meal, salt and pepper to taste


cayenne Pepper


vegetable oil





Instructions:





Heat skillet and 1 inch of vegetable oil.


Wash catfish.


Beat egg.


Dip catfish in egg.


Put garlic salt on both sides of the fillets.


Shake on cayenne pepper.


Dip in breading-twice.


Put fillets in hot oil.


Cook until golden brown and tender in the middle.


Fry time is usually 8 to 12 minutes.


Take fillets out the skillet and set on a paper towel.


Optional-sprinkle with Louisiana Hot Sauce庐.





Comments: If you do not like spicy food omit the cayenne pepper.


If you like it hot add as much cayenne as you can stand and dip in hot sauce, ketchup, and lemon juice mixed together.








Deviled crab eggs:


Ingredients:





eggs,


backfin or lump crab meat


scallions,


mayo


cayenne pepper





Instructions:





Boil eggs and cut in half lengthwise.


Remove the egg yolks.


Mix egg yolk, crab meat, scallions, mayonnaise, cayenne pepper.


Chop up real fine.


Other seasonings can be added to taste, i.e. dry mustard.

try chopping up a few chicken breasts and boiling it in about 1 cup chicken broth and two cups water. add about 2 tbsp of sage and salt and pepper to taste. You could add a little celery salt, too if you want. take a can of biscuits or make some bisquick dough (pkg instructions). Either cut canned biscuits into 4's and drop in boiling chicken or drop in dough 1 tbsp at a time. let boil until dumplings are fluffy in the middle, then serve.


ps- sage is always good in chicken dishes :)
