Eggplant and Pepper Parmesan Sandwiches


Smoky grilled veggies, rich tapenade, and tangy goat cheese make these sandwiches hearty and satisfying.





INGREDIENTS:


1 eggplant, seeded and cut lengthwise into 1/4 inch slices


1 red bell pepper, sliced into thin strips


salt and pepper to taste


1 French baguette


2 ounces soft goat cheese


1/4 cup tapenade (olive spread)


1/4 cup grated Parmesan cheese





DIRECTIONS:


Preheat the oven broiler.


Place the eggplant and red bell pepper on a medium baking sheet, and season with salt and pepper. Broil 5 to 10 minutes, until tender and slightly browned.


Cut baguette in half lengthwise. Spread bottom half with goat cheese, followed by tapenade. Layer with eggplant and red pepper, then sprinkle with Parmesan cheese. Cover with top half of baguette. Cut into 4 pieces. Serve hot or cold





Chocolate Chocolate Chip Cookies


INGREDIENTS:


1 cup butter, softened


1 1/2 cups white sugar


2 eggs


2 teaspoons vanilla extract


2 cups all-purpose flour


2/3 cup cocoa powder


3/4 teaspoon baking soda


1/4 teaspoon salt


2 cups semisweet chocolate chips


1/2 cup chopped walnuts (optional)





DIRECTIONS:


Preheat oven to 350 degrees F (175 degrees C).


In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.


Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.
When we go to the soul food place, we get fried chicken, okra, and sweet yams.





The fried chicken is well, fried and the okra seems to be boiled.


So I'll give you my sweet yams.





3 fresh yams, peeled and cut into 2 inch cubes


1 cup butter/ 1 stick


3 tbsp brown sugar


1 tsp honey or molassas


cinnamon





Boil the yams for 30 minutes or in a microwave safe dish, add a little water, and cook it on high for 10 minutes, poking holes in the yams and cover with a paper towel or saran wrap to avoid splattering.





When the yams are done, drain and then add the butter and mix it until its melted. Sprinkle some cinnamon and then add the brown sugar and mix well. Lastly add the molassas or honey. Don't measure, a good squeeze will do.





Mix well, serve hot. You can mash it if you want.
